Date & Spice Almond Cookies

8 red dates (pitted)

Optional toppings: almond slivers, chocolate chips, or chopped pecans — go wild!

Instructions

Blend it up: Add everything to a food processor and pulse until it forms a soft dough.
Avoid using a Nutribullet — trust me, I learned the hard way. My Ninja food processor worked great, any good blender would too.

Adjust if needed: If the dough feels too dry, add an extra date or a bit more ghee.

Preheat oven to 350°F (175°C).

Shape: Roll dough into small balls and gently press your thumb in the center to create an indent.

Bake: Place on a parchment-lined baking sheet and bake for 10 minutes.

Top it off: Once out of the oven, fill the indents with your favorite toppings.

Serve & enjoy: I love these with a cozy cup of tea or warm milk — but you do you!

Jujube Tea (Red Date Tea)

6–8 dried red dates (jujubes), pitted

2–3 slices of fresh ginger

2 cups water

Optional: a few goji berries or a stick of cinnamon for extra nourishment

Honey (to taste, if desired)
​You can find these at any Asian grocery store or Superstore.​
Instructions

Rinse the red dates and slice them in half to release more flavor.

Add dates, ginger, and any optional ingredients to a small pot with 2 cups of water.

Bring to a boil, then reduce heat and simmer for 15–20 minutes.

Strain into a mug and sweeten with honey if desired.

Sip slowly and enjoy the warmth and comfort.
